smoky tostadas

serves 4

tostada shells:

8 corn tortillas

vegetable oil for frying 

1 tsp. salt

(or purchase tostada shells-i wont tell)

meaty goodness:

1 pkg. pulled pork or chicken, thawed

1/3 cup lime juice

1/4 cup cilantro

pico de gallo: 

4 roma tomatoes, rinsed with cold water

1 red onion, peeled 

1/2 jalapeno

1/4 cup fresh cilantro

1 tsp. salt

(or purchase pico-i wont tell)

2 cups refried beans 

3/4 cup shredded monterey jack cheese

1/2 head iceberg lettuce, shredded 

1 avocado, peeled, core removed and sliced

2 scallions, chopped 

1/2 cup sour cream

tostada: 

heat oil in a large skillet over medium high heat. add tortillas one at a time, fry tortillas for 2-3 minutes, turning once until crispy. remove and drain on paper towels. 

meaty goodness:

microwave pulled pork or chicken in package for 2 minutes or until warm. remove from package and stir, return to the microwave if further heating is needed. toss with lime juice and cilantro and keep warm until ready to serve.

pico:

in a food processor "chop" together tomatoes, onion, jalapeno, cilantro and salt until chunky. scrape mixture into a bowl and keep chilled until ready to serve.

put it all together:

spread refried beans onto crisp toastada shells. top with meat mixture, shredded cheese, shredded lettuce, pico, avocado, sour cream and scallions. serve asap.
