portuguese gumbo

serves 4

5 tablespoons butter

1 large onion, peeled and chopped

8 garlic cloves, peeled and minced

1 green bell pepper, seeded and chopped

3 celery stalks, chopped

1/4 cup all purpose flour

1 pkg. linguicia sausage, sliced

1/4 cup worchestershire sauce

4 cups beef broth

1 can stewed tomatoes

1 cup kale pesto

2 cup okra, sliced

4 green onions, sliced

heat butter in a large soup pot over medium high heat. saute onions, garlic, peppers, celery for 5 minutes or until vegetables are tender. stir in flour, coat vegetables and cook for an additional 5 minutes or until flour has turned a caramel brown. add sausage, worchestershire sauce, beef broth, stewed tomatoes, kale pesto and okra. reduce heat to medium low and continue to cook for 30 minutes, stirring frequently. serve hot and garnish with green onions.
