linguicia with charred tomato pomodoro

serves 4

8 roma tomatoes. rinsed with cold water

3 tbsp. olive oil

2 tsp. salt

2 tsp. black pepper

4 garlic cloves 

1/2 cup fresh basil leaves, rinsed 

1 pkg. pork/chicken linguicia, thawed 

1 pkg. pasta, your choice, cooked

 

in a large bowl toss tomatoes with oil, salt, pepper and garlic cloves. preheat grill to medium high heat. arrange tomatoes on the preheated grill directly above the flames. wrap garlic cloves in aluminum foil and place on the grill, not directly over the flames. cover and grill for 5-8 minutes, turning once, or until tomatoes have charred and garlic is golden brown. remove tomatoes and garlic and place in a food processor with basil, pulse until smooth. grill linguicia until warm throughout, let rest for 5 minutes before slicing into bite sized pieces. toss sauce together with sausage and cooked pasta before serving. great with shaved romano or parmesan cheese!
