sausage satay

serves 6

1 1/2 tbsp. vegetable oil

1/2 yellow onion, peeled and minced 

2 garlic cloves, minced 

1 tsp. chili flakes 

1 cup coconut milk

1/4 cup peanut butter

3 tsp. fish sauce

1 tbsp. brown sugar

2 tsp. lime juice 

1 pkg. texas hot links/kielbasa/linguicia, thawed and sliced

preheat grill to medium high heat. in a large skillet heat oil over medium high heat, saute onions until tender and add garlic, chili flakes, coconut milk, peanut butter, fish sauce, brown sugar and lime juice. bring to a simmer while whisking continuously. reduce heat to low and keep warm until ready to serve. arrange sausage slices onto skewers, place skewers on grill and cook turning once, for 5 minutes or until sausages are hot. spoon hot satay sauce over sausages, until coated. serve asap.

***great with cooked pasta or as an appeitzer. garnish with chopped cilantro, if you choose
